Stabilizers
Stabilizers are substances that allow the preservation of food physico-chemical structure. In particular they allow the preservation of homogeneous dispersal of two or more non-mixed food substances. This category also includes substances that stabilize, preserve or intensify the existing food color.
Chemically mainly are:
• polysaccharides (guar gum, gum arabic, carrageenans, pectins, alginates, etc.)
