Rennet and coagulants

Rennet is a complex set of proteolytic enzymes, the effect of which is the milk coagulation during the cheese making process. BILLTEC offers a complete range of rennet products that can be divided into 3 categories:

A) Animal origin rennet

It is produced by the stomach extraction of young animals (calves, lambs, goats) exclusively breastfed and is available in liquid and powder form with a wide variety of chymosin and pepsin concentrations.

Powder bovine rennet with activity 1:125.000
(contains 95% chymosin, 5% pepsin)

Liquid bovine rennet with activity 1:15.000
(contains 80% chymosin, 20% pepsin)

Paste goat rennet with activity 1:15.000
(contains 80% chymosin, 20% pepsin)

Liquid goat rennet with activity 1:15.000
(contains 80% chymosin, 20% pepsin)

B) Microbial origin coagulant

Microbial coagulant is used in all types of cheese and is produced by fermentation of Mucor meihei. It is available in multiple concentrations to meet the specific needs of every dairy industry.

Powder coagulant with activity 2250 IMCU/g ή 1:150.000

Reniplus NG 15000

C) Microbial chymosin

It is produced by fermentation of Kluyveromyces lactis, is used in all types of cheese and is available in liquid and powder form.
